Canning season is in full swing now

This week I have been busy canning and freezing produce.  So far I’ve been able to can sliced peaches, peach honey, peach pie filling, and Mountain Berry pie filling (blackberries, blueberries, raspberries)  I also froze strawberries, blueberries and sweet corn.  Although it has been a lot of work preserving all this, I am so thankful that we will have all these yummy treats when the snow is whirling outside.

I just love having pie filling canned because it is so easy to use.  I most often use pie fillings to make cobblers.  Simply pour the pie filling into a pie plate or casserole dish and top with your favorite topping.  In just the time it takes to slightly brown the topping in the oven you have a wonderful dessert.

Introduction

My idea is to use this blog to connect with family and friends and to also be a written record of our progress in our journey of life. We are a Christian homeschooling family who has been more blessed by God than we could have ever imagined!

Feel free to join us as we seek to honor God with our little homestead. We are hopeful that God will enlarge our territory and give us a larger plot of land in the future. Until then, we will try to make the very best of the small piece we have been intrusted with.
